1 English Cucumber
3 tsp salt
1-2 Tbsp dill
1/2 cup white vinegar
Slice the cucumber as thin as possible (I did it on the magimix type thing or a mandoline will work well).
Place cucumber slices in a 1lt container
Add the salt, dill and vinegar.
You may think there isn't enough vinegar, but the salt will draw out liquid from the cucumbers and combine with vinegar and make the brine needed.
Cover and place in the fridge. Ready to eat after 1-2 hours and can last up to 3 weeks. Delicious and good for you!
