2 Tablespoons currants
2 tablespoons orange juice and zest of 1 orange

1 D/spoon white wine vinegar
1 D/spoon lemon juice
4 tablespoons Olive oil
1 cup mixed nuts
1/2 red onion - chopped
1 red apple, chopped
cook rice as per packet instructions and fold in other ingredients. Season to taste with salt, freshly ground black pepper and sugar.
