Serves 4 - 6

• 6 – 8 chicken portions – thighs or drumsticks
• Salt and pepper
• 3 tablespoons melted butter
• 2 cloves garlic, crushed
• 1 ½ pkt cheese and onion crisps

Place chicken portions skin side up in a single layer in an oven-proof dish. Season with salt and pepper or chicken spice. Add crushed garlic to melted butter and dribble over chicken. Crush chips with a rolling pin and sprinkle over chicken. Bake uncovered at 200oC (400oF) for about 1 hour until brown and cooked. Serve with a health rice and a green vegetable or salad.
