Well my son just messaged me asking for my Pumpkin Fritter recipe, here it is!!
Basketball


• 500ml cooked, mashed well drained pumpkin
• 1 egg, lightly beaten
• 250ml flour
• 10ml baking powder
• 2ml salt
• 1ml ground nutmeg
• Cinnamon sugar
• Lemon wedges
• Oil for deep frying

Combine pumpkin and egg, mix well. Sift flour, baking powder, salt and nutmeg and add to pumpkin mixture, beat well. Drop spoonfuls into hot oil. Fry until golden brown on both sides. Drain on absorbent kitchen paper towels. Sprinkle with cinnamon sugar and serve warm with lemon wedges.
Makes about 12 fritters
