 CRUMPETS - FLAP JACKS

Some call them crumpets and others Flap Jacks. I have grown up calling them Flap Jacks. So quick and easy to make when unexpected visitors arrive. Enjoy.

• 1 large egg
• 2T sugar
• ½ - ¾ cup milk
• 1 cup flour
• 1/4t salt
• 1T melted butter
• 2t baking powder

Beat egg and sugar together, add ¼ cup milk, sift in flour and salt. Mix well and add remaining milk and beat until smooth. Stir in melted butter and baking powder. Add spoonfuls into a hot pan and cook as required.
