PostSubject: Bobotie ... Need HELP!   Sat Jul 30, 2011 9:06 pm

I made a bobotie tonight, it tastes great, but it shrunk so much from the edges of the pan. I used extra lean ground beef ... could that be the problem? Every else is great, the taste etc, but I had to put it into a smaller dish so I could pour the custard over ... it doesn't look very pretty pmsl! How do I solve this, I would like to do a South African evening for some Canadians friends, but there's no way I could put this ugly looking bobotie onto the table .... unless I got them drunk first!

TIA xxx

First of all apologies for the late reply and you do make me laugh.

Did you use a Bobotie recipe from this Forum, if so, which one? Extra lean mince should have nothing to do with the shrinkage at all however, cooking any meat straight from the fridge does cause shrinkage. All meat should be cooked at room temperature with the exception of fish.

Your dish was definitely too small.

Please let me know which recipe you used and do not give up, try again as it really is a lovely South African dish to serve your guests.

Take care.
