 LAMB CHOPS AND SAVOURY RICE - PRESSURE COOKER

PostSubject: LAMB CHOPS AND SAVOURY RICE - PRESSURE COOKER   Sun Jul 24, 2011 3:29 am

For those of you who own a pressure cooker and pressed for time, this is just the recipe for you.

• 1 tablespoon oil
• 2 onions chopped
• 2 tomatoes chopped
• ¼ teaspoon rosemary
• 1 chicken stock cube
• 4 large lamb chops
• 1 cup rice
• 1 green pepper chopped
• salt and pepper
• water

Heat oil in pressure cooker and brown chops. Remove from the cooker and fry the onions until soft. Add the rice, tomatoes, green pepper, rosemary and seasoning. Crumble the stock tables into the mixture and add sufficient water to come halfway up the mixture. Stir well until the stock cube is dissolved. Arrange chops on top of the rice mixture, cover the cooker and bring up to pressure. Cook at 2nd ring for 20 minutes.
