Enjoy!!!

• 100g butter at room temperature
• 175g soft brown sugar
• 2 eggs
• ½ teaspoon vanilla essence
• 175g flour
• ¼ teaspoon baking powder
• Pinch of salt
• 100g chocolate, grated or chopped in food processor
• 75g chopped walnuts or pecan nuts

Cream the butter and sugar until light and fluffy. Add the vanilla to the eggs and beat very lightly with a fork, then beat in gradually into the butter mixture. Sift the dry ingredients 3 times. Fold it into the creamed mixture. When mixed, add the chocolate and nuts. Place heaped teaspoonfuls on a baking sheet. Bake at 180oC (350oF) for about 10 - 15 minutes, depending on size of the cookie. When done, they will be brown and firm to touch. Store in an airtight container. You can also sandwich two biscuits together with melted milk chocolate.
