Sudza as it is call back in my home town - Rhodesia, sorry but I still call it that. Why not try this with your next braai, or any other dish, instead of Bangers and Mash cook pap instead! Let's be honest here, no one can make it like the Africans do and each time I make it, it brings back such wonderful memories of back home. However, once you have made this in the microwave you will NEVER make it on the stove again Adjust the amount of mealie meal you put in to the consistency that you want it to be i.e. add more if you want it stiff and crumbly etc.

1.5 litres of boiling water
10ml salt
500ml coarse mealie meal - I am finding that this is becoming more fine as the years go by

Pour boiling water into a deep 3.5 litre microwave proof dish. Add salt and stir until mixed. Add mealie meal and mix. Microwave mixture uncovered at 100% power for 5 minutes. Stir well, cover with lid and clingwrap and microwave for another 20 to 30 minutes at 50% power. Stir well with a large fork and serve.

For the chilli lovers and compliments of Dave Wright, add chopped up FRESH chilli!! Very moreish!!
