 WATERMELON, FETA AND ROCKET SALAD

PostSubject: WATERMELON, FETA AND ROCKET SALAD   Fri Apr 08, 2011 11:19 am

Quantities depend on how many people.

* Watermelon, cubed - seedless variety if you can
* Feta cheese, cubed - roughly the same amount of Feta as Watermelon
* Fresh Rocket
* Roasted Pumpkin Seeds

For the dressing (makes +- 250ml)

* 1 cup watermelon, chopped
* juice of 1/2 lemon
* 1tsp honey
* 1/2 tsp salt
* 1/3 cup olive oil
* black pepper

* Blend/ Process the watermelon. If you prefer a ‘clear’ dressing, you can strain the watermelon juice but I didn’t mind a bit of texture.
* Add the lemon juice, seasoning and oil slowly.
* Pour over the salad ingredients and serve.

Or just use a salad dressing of your choice. Balsamic and Olive Oil is a good one.
